Bulgogi — "fire meat" — is thinly sliced beef marinated in soy sauce, sugar, sesame oil, garlic and grated pear, then grilled or pan-fried until slightly caramelized. It's one of the most internationally recognized Korean dishes.

Ingredients
- 2 lb (900 g) thinly sliced beef (rib eye or top sirloin)
- 6 tbsp soy sauce
- 3 tbsp water
- 4 tbsp sugar (or a mix of sugar and honey)
- 2 tbsp rice wine or mirin
- 2 tbsp minced garlic
- 2 tbsp sesame oil
- 2 tsp sesame seeds
- ½ Korean pear (or a sweet apple), grated
- Pinch black pepper
- 3 scallions, cut into 2-inch pieces
- 1 small onion, thinly sliced
- 1 small carrot, thinly sliced, optional
Steps
- 1Combine the soy sauce, water, sugar, rice wine, garlic, sesame oil, sesame seeds, grated pear and pepper into a marinade.
- 2Toss the beef, scallions, onion and carrot with the marinade and let sit for at least 30 minutes (or overnight for deeper flavor).
- 3Heat a grill pan or skillet over high heat and cook the meat in batches until slightly caramelized at the edges, one to two minutes per side.
- 4Serve hot, with rice and lettuce for wrapping if desired.
