Bulgogi — "fire meat" — is thinly sliced beef marinated in soy sauce, sugar, sesame oil, garlic and grated pear, then grilled or pan-fried until slightly caramelized. It's one of the most internationally recognized Korean dishes.

Ingredients

  • 2 lb (900 g) thinly sliced beef (rib eye or top sirloin)
  • 6 tbsp soy sauce
  • 3 tbsp water
  • 4 tbsp sugar (or a mix of sugar and honey)
  • 2 tbsp rice wine or mirin
  • 2 tbsp minced garlic
  • 2 tbsp sesame oil
  • 2 tsp sesame seeds
  • ½ Korean pear (or a sweet apple), grated
  • Pinch black pepper
  • 3 scallions, cut into 2-inch pieces
  • 1 small onion, thinly sliced
  • 1 small carrot, thinly sliced, optional

Steps

  1. 1Combine the soy sauce, water, sugar, rice wine, garlic, sesame oil, sesame seeds, grated pear and pepper into a marinade.
  2. 2Toss the beef, scallions, onion and carrot with the marinade and let sit for at least 30 minutes (or overnight for deeper flavor).
  3. 3Heat a grill pan or skillet over high heat and cook the meat in batches until slightly caramelized at the edges, one to two minutes per side.
  4. 4Serve hot, with rice and lettuce for wrapping if desired.
