Japchae is a dish of chewy sweet-potato-starch noodles tossed with separately stir-fried vegetables and beef, seasoned with soy sauce, sugar and sesame oil. V of BTS has named it among his favorite foods, alongside meat dishes in general.

Ingredients
- 250 g (9 oz) sweet potato starch noodles (dangmyeon)
- 100 g (3.5 oz) beef (rib eye or similar), cut into strips
- 1 carrot, julienned
- 110 g (4 oz) spinach
- ½ onion, thinly sliced
- 100 g (3.5 oz) shiitake mushrooms, thinly sliced
- 1 egg, fried and sliced into strips (optional)
- 4 tbsp soy sauce, 1 tbsp honey, 1 tbsp brown sugar, 1 tbsp sesame oil (noodle seasoning)
- 1 tbsp soy sauce, 1 tsp minced garlic, sesame oil, black pepper (beef marinade)
- Toasted sesame seeds and sesame oil, to finish
Steps
- 1Marinate the beef strips in soy sauce, garlic, sesame oil and pepper.
- 2Boil the noodles for 6–7 minutes until tender, drain, and cut into shorter lengths with scissors. Toss with the noodle seasoning.
- 3Blanch the spinach briefly and season lightly with salt, garlic and sesame oil.
- 4Stir-fry the onion, carrot, mushrooms and beef separately, then combine everything — noodles, vegetables and beef — in a large bowl.
- 5Add the fried egg strips, sesame seeds and a final drizzle of sesame oil, and toss gently until evenly coated. Serve warm or at room temperature.
