Ingredients
- 1 medium squid (about 400 g / 14 oz), cleaned and cut into rings
- ½ carrot, cut into pieces
- ½ onion, sliced
- ½ zucchini, cut into pieces
- 2 scallions, cut into 2-inch lengths
- 1 tbsp vegetable oil, 1 tbsp sesame oil
- 2 tbsp gochujang
- 1 tbsp gochugaru
- 1½ tbsp soy sauce
- 1 tbsp sugar
- 1 tbsp minced garlic, 1 tsp minced ginger
- 1 tsp sesame seeds, black pepper
Steps
- 1Mix the gochujang, gochugaru, soy sauce, sugar, garlic, ginger, sesame seeds and pepper into a sauce.
- 2Toss the squid with a couple of spoonfuls of the sauce and set aside to marinate briefly while prepping the vegetables.
- 3Heat the vegetable oil in a large skillet over high heat. Stir-fry the carrot first, then add the onion, zucchini and scallions until just wilting.
- 4Push the vegetables to one side, add the squid to the center, and stir-fry until it turns opaque and curls, about 2 minutes.
- 5Combine the squid and vegetables with the remaining sauce, drizzle with sesame oil, and serve hot with rice.
