Ojingeo bokkeum is fresh squid stir-fried at high heat in a sweet-and-spicy gochujang sauce with onion, carrot and zucchini. Dino of SEVENTEEN has named fried squid with spicy sauce among his favorite foods.

Ingredients

  • 1 medium squid (about 400 g / 14 oz), cleaned and cut into rings
  • ½ carrot, cut into pieces
  • ½ onion, sliced
  • ½ zucchini, cut into pieces
  • 2 scallions, cut into 2-inch lengths
  • 1 tbsp vegetable oil, 1 tbsp sesame oil
  • 2 tbsp gochujang
  • 1 tbsp gochugaru
  • 1½ tbsp soy sauce
  • 1 tbsp sugar
  • 1 tbsp minced garlic, 1 tsp minced ginger
  • 1 tsp sesame seeds, black pepper

Steps

  1. 1Mix the gochujang, gochugaru, soy sauce, sugar, garlic, ginger, sesame seeds and pepper into a sauce.
  2. 2Toss the squid with a couple of spoonfuls of the sauce and set aside to marinate briefly while prepping the vegetables.
  3. 3Heat the vegetable oil in a large skillet over high heat. Stir-fry the carrot first, then add the onion, zucchini and scallions until just wilting.
  4. 4Push the vegetables to one side, add the squid to the center, and stir-fry until it turns opaque and curls, about 2 minutes.
  5. 5Combine the squid and vegetables with the remaining sauce, drizzle with sesame oil, and serve hot with rice.
