Samgyeopsal — thick slices of pork belly grilled at the table — is one of Korea's most common ways to eat meat with friends. RM of BTS has named it among his favorite foods, alongside kalguksu.

Ingredients

  • 1 lb (450 g) fresh pork belly, sliced ¼–½ inch thick
  • 8 cloves garlic, thinly sliced
  • 2–4 green chili peppers, sliced
  • 3–4 scallions, thinly sliced
  • Lettuce and perilla leaves, for wrapping
  • 1 tbsp sesame oil, ½ tsp salt, black pepper (dipping sauce)
  • 2 tbsp doenjang, 1 tbsp gochujang, 1 tsp minced garlic, 2 tsp sesame oil, 1 tsp sesame seeds (ssamjang, serves 4)

Steps

  1. 1Prepare the vegetables and mix the two dipping sauces (sesame-oil salt, and ssamjang).
  2. 2Heat a grill pan or griddle over moderate heat. Cut the pork belly into bite-size pieces before or after grilling.
  3. 3Grill the pork belly along with the garlic and chili peppers, turning once, until golden brown and cooked through (internal temperature at least 145°F / 63°C).
  4. 4Wrap a piece of grilled pork in lettuce or perilla leaf with garlic, chili and a dab of sauce, and eat in one bite.
