Yuqi (i-dle)

Jokbal is pig's trotters braised for hours in soy sauce, garlic, ginger and rice wine until the meat is tender enough to fall off the bone, then sliced thin and eaten wrapped in lettuce. Yuqi of i-dle has named it, along with pickled radish, among her favorite foods.

Ingredientes

  • 2 pork trotters (hocks), well cleaned
  • 1 onion, 1 leek and a whole bulb of garlic
  • 1 apple, halved
  • A few slices of fresh ginger
  • 2–3 dried jujubes (Korean dates), optional
  • 1 cinnamon stick, 1–2 star anise
  • 1 cup soy sauce
  • 3 tbsp brown sugar or rice syrup
  • 2 tbsp doenjang (fermented soybean paste)
  • 3 tbsp soju or rice wine
  • Lettuce, ssamjang and sliced garlic, for serving

Pasos

  1. 1Soak the trotters in cold water for a few hours, changing the water occasionally, to draw out the blood.
  2. 2Boil the trotters in fresh water for about 10–15 minutes, then drain and rinse to remove scum.
  3. 3Return the trotters to the pot with the onion, leek, garlic, apple, ginger, jujubes, cinnamon and star anise.
  4. 4Add the soy sauce, sugar, doenjang and soju, top up with enough water to cover, and simmer for 2–3 hours until the meat is very tender and the liquid has reduced.
  5. 5Let the meat cool for about 20 minutes so it firms up, then slice thinly and serve with lettuce, garlic and ssamjang for wrapping.
